Hawaiian Pork and Pineapple Salad
INGREDIENTS
Dressing
- 2 cloves minced garlic
- 1/4 tsp smoked paprika
- 1/4 c lime juice
- 1/2 c EVOO
- salt
- pepper
Salad
- Polynesian Barbecue Rub
- 3 lbs pork tenderloin or 3 lbs of chops
- 4 Tbsp EVOO
- 3 c diced fresh pineapple
- 2 avocados, peeled and diced
- 1 head red cabbage, thinly sliced
- 1 head butter lettuce, leaves separated and sliced
PREPARATION
Dressing
- Whisk together dressing ingredients or blend with blender.
Salad
- Rub pork with rub. Let rest ten minutes.
- Brush pork with EVOO and broil or fry until cooked.
- Let rest 10 minutes, then slice.
For dinner salad
- In large bowl, toss ingredients together.
- Serve at room temperature.
For mason jar salads
- Layer as follows: pineapple, avocado, pork, cabbage, lettuce.
- Put dressing in a separate cup.
