Hawaiian Pork and Pineapple Salad

INGREDIENTS

Dressing

  • 2 cloves minced garlic
  • 1/4 tsp smoked paprika
  • 1/4 c lime juice
  • 1/2 c EVOO
  • salt
  • pepper

Salad

  • Polynesian Barbecue Rub
  • 3 lbs pork tenderloin or 3 lbs of chops
  • 4 Tbsp EVOO
  • 3 c diced fresh pineapple
  • 2 avocados, peeled and diced
  • 1 head red cabbage, thinly sliced
  • 1 head butter lettuce, leaves separated and sliced

PREPARATION

Dressing

  1. Whisk together dressing ingredients or blend with blender.

Salad

  1. Rub pork with rub. Let rest ten minutes.
  2. Brush pork with EVOO and broil or fry until cooked.
  3. Let rest 10 minutes, then slice.

For dinner salad

  1. In large bowl, toss ingredients together.
  2. Serve at room temperature.

For mason jar salads

  1. Layer as follows: pineapple, avocado, pork, cabbage, lettuce.
  2. Put dressing in a separate cup.
