Japanese Cabbage Stew
INGREDIENTS
6 c coleslaw mix
1.25 lbs ground pork
1 c fresh spinach, chopped
1 large or two small red bell peppers, chopped
1 onion, chopped
1 stalk celery, chopped
2 scallions, chopped
1/2 tsp salt
1/4 tsp pepper
2 Tbsp red miso
4 c chicken broth
1/4 c soy sauce
3 Tbsp tomato paste
2 Tbsp sake or cream sherry
1 Tbsp rice vinegar
1 tsp thyme, mortared
PREPARATION
Use crock liner.
In a large bowl, combine coleslaw, ground pork, spinach, pepper, onlon, celery, scallion, salt pepper and miso.
Place in crock.
In a medium bowl, whisk broth, soy sauce, tomato paste, sake, vinegar and thyme.
Pour over pork mixture in crock; stir to combine.
Cover and cook on LOW for 6 hours.
