Japanese Cabbage Stew

INGREDIENTS

  • 6 c coleslaw mix
  • 1.25 lbs ground pork
  • 1 c fresh spinach, chopped
  • 1 large or two small red bell peppers, chopped
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 2 scallions, chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp red miso
  • 4 c chicken broth
  • 1/4 c soy sauce
  • 3 Tbsp tomato paste
  • 2 Tbsp sake or cream sherry
  • 1 Tbsp rice vinegar
  • 1 tsp thyme, mortared

PREPARATION

  1. Use crock liner.
  2. In a large bowl, combine coleslaw, ground pork, spinach, pepper, onlon, celery, scallion, salt pepper and miso.
  3. Place in crock.
  4. In a medium bowl, whisk broth, soy sauce, tomato paste, sake, vinegar and thyme.
  5. Pour over pork mixture in crock; stir to combine.
  6. Cover and cook on LOW for 6 hours.
