Jerk Pork with Caribbean Salsa

INGREDIENTS

Pork

  • 3 lb boneless pork roast or loin
  • 6 cloves garlic, crushed
  • 2 Tbsp mild jerk seasoning
  • 1/2 tsp kosher salt
  • 1 lime, squeezed
  • 1/2 c orange juice

Salsa

  • 1 avocado, diced
  • 2 mangos, peeled, seeded and coarsely chopped
  • 1 1/2 Tbsp chopped red onion
  • 2 Tbsp chopped fresh parsley
  • 2-3 Tbsp lime juice
  • salt and pepper to taste

PREPARATION

  1. Cut slits in pork with sharp knife and stuff with half the garlic.
  2. COmbine remaining garlic with seasoning and salt; wearing gloves, rub over pork.
  3. Put in gallon zipper bag and add juices.
  4. Marinate overnight, turning occasionally.
  5. Put everything in crock and cook on LOW for 9 hours.
  6. Remove pork and shred.
  7. Remove and reserve liquid; return pork and 1 c liquid to crock.
  8. Cook 15 minutes.
  9. Make Salsa: Combine ingredients in bowl, refrigerate until ready to serve.
