Jerk Pork with Caribbean Salsa
INGREDIENTS
Pork
3 lb boneless pork roast or loin
6 cloves garlic, crushed
2 Tbsp mild jerk seasoning
1/2 tsp kosher salt
1 lime, squeezed
1/2 c orange juice
Salsa
1 avocado, diced
2 mangos, peeled, seeded and coarsely chopped
1 1/2 Tbsp chopped red onion
2 Tbsp chopped fresh parsley
2-3 Tbsp lime juice
salt and pepper to taste
PREPARATION
Cut slits in pork with sharp knife and stuff with half the garlic.
COmbine remaining garlic with seasoning and salt; wearing gloves, rub over pork.
Put in gallon zipper bag and add juices.
Marinate overnight, turning occasionally.
Put everything in crock and cook on LOW for 9 hours.
Remove pork and shred.
Remove and reserve liquid; return pork and 1 c liquid to crock.
Cook 15 minutes.
Make Salsa:
Combine ingredients in bowl, refrigerate until ready to serve.
