Kalua Pork

INGREDIENTS

  • 3 lb pork roast
  • kosher or coarse sea salt
  • 1 Tbsp liquid Mesquite smoke

PREPARATION

  1. Put roast in crock.
  2. Pierce all over with a knife.
  3. Rub with salt, then liquid smoke.
  4. Cook about 16 hours.
  5. Remove to platter and shred.
  6. Discard all juice except that needed to keep pork moist.
