Kalua Pork
INGREDIENTS
3 lb pork roast
kosher or coarse sea salt
1 Tbsp liquid Mesquite smoke
PREPARATION
Put roast in crock.
Pierce all over with a knife.
Rub with salt, then liquid smoke.
Cook about 16 hours.
Remove to platter and shred.
Discard all juice except that needed to keep pork moist.
