Kielbasa and Kraut

INGREDIENTS

  • 1 lb kielbasa
  • 1 Tbsp oil
  • 2 medium carrots, thinly sliced
  • 1 medium onion, chopped
  • 2 c sauerkraut, drained
  • 3/4 c apple juice
  • 1 Tbsp Dijon mustard
  • 1 Tbsp brown sugar

PREPARATION

  1. Cut kielbasa into serving portions
  2. Heat oil in skillet on medium. Add carrots and onions, cook until onions begin to brown, stirring frequently.
  3. Add kraut, juice, mustard and sugar, mix well.
  4. Top with kielbasa and bring to boil.
  5. Cover, reduce heat.
  6. Simmer for ten minutes.
