Lemon-Spinach Chicken Soup

INGREDIENTS

  • 6 Cups baby spinach
  • 3/4 Pound cooked chicken breast
  • 6 Cups chicken broth
  • 1/3 Cup heavy cream
  • 3 Tablespoons lemon juice
  • salt and pepper to taste

PREPARATION

  1. Chop spinach and chop or shred chicken.
  2. In soup pot combine broth, chicken and spinach.
  3. Heat on medium-high until boiling and spinach is wilted.
  4. Add cream and heat another 3 minutes.
  5. Season with lemon juice, salt and pepper.
