Lemon Tarragon Chicken with Cauliflower & Artichokes

INGREDIENTS

  • 4 boneless skinless breast halves
  • 1/2 c lemon juice
  • 1 can chicken broth
  • 2 tsp tarragon
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1 pkg frozen cauliflower
  • 1 pkg frozen artichokes
  • 1/4 c flour
  • 1/2 c heavy cream

PREPARATION

  1. Place chicken in slow cooker and add lemon juice and chicken broth, tarragon, salt and pepper.
  2. Add cauliflower and artichokes.
  3. In a small bowl, combine flour and cream and pour over vegetables and chicken.
  4. Cover and cook on low 6-7 hours.
