Madrid Pork Chops

INGREDIENTS

  • 2 cloves garlic, minced
  • 4 springs parsley, chopped
  • 1 medium onion, chopped
  • 1 Tbsp Spanish paprika
  • 5 Tbsp EVOO
  • 4 pork chops
  • salt and pepper to taste

PREPARATION

  1. Heat oven to 450
  2. In mixing bowl, combine garlic, parsley, and onion.
  3. Season with salt, pepper, and paprika.
  4. Add 3 Tbsp EVOO.
  5. Grease a roasting pan or line with foil
  6. Season the pork chops with the mixture and place in the prepared pan.
  7. Place remaining mixture between chops.
  8. Bake for 15 minutes.
  9. Turn chops over, piling onion mixture on top and bake another 15-20 minutes until done.
