Mahogany Chicken Thighs

INGREDIENTS

  • 1/3 c pineapple juice
  • 1/4 c soy sauce
  • 3 Tbsp potato starch
  • 3 Tbsp balsamic vinegar
  • 2 Tbsp cider vinegar
  • 2 Tbsp tomato paste
  • 1 Tbsp honey
  • 1 Tbsp jar garlic
  • 1 tsp ground ginger
  • 1/4 tsp cayenne
  • 1 onion, sliced into wedges
  • 2 carrots, peeled and sliced
  • 8 chicken thighs
  • 3 scallions, sliced (garnish)

PREPARATION

  1. Combine juice, soy sauce, potato starch, vinegars, tomato paste, honey, ginger, garlic and cayenne, set aside
  2. Place onion in slow cooker; add chicken, then carrots.
  3. Pour sauce evenly on top.
  4. Cover, cook on LOW for 6 hours.
  5. Serve with rice.
