Mediterranean Style Chicken & Pasta

INGREDIENTS

  • 6 oz multigrain pasta
  • 2 tsp EVOO
  • 1/2 onion chopped
  • 2 zucchini in 1/4" moons
  • 2 cloves garlic, minced
  • 2 c cooked chicken cut into bite-sized pieces
  • 1 can diced tomatoes
  • 1 8-oz can tomato sauce
  • 1/2 tsp oregano
  • 1 tsp basil
  • 1/4 c kalamatas, quartered lengthwise
  • 3/4 c crumbled feta (3 oz)

PREPARATION

  1. In red pot, cook pasta, drain, return to pot.
  2. In mondo skillet, heat oil over medium.
  3. Add onion, cook 3-4 minutes, until crisp-tender.
  4. Add zucchini and garlic, cook 2 minutes
  5. Stir in chicken, tomatoes, sauce, oregano, and basil.
  6. Reduce heat and simmer 5-7 minutes, stirring occasionally.
  7. Stir in olives.
  8. Pour chicken mixture over pasta; top with feta. Toss to coat.
