Moo Shu Chicken
INGREDIENTS
1/2 c hoisin sauce
2 Tbsp water
4 tsp toasted sesame oil
1 Tbsp cornstarch
1 Tbsp soy sauce
3 cloves garlic, minced
1 bag coleslaw mix
1 c carrot shreds
4 boneless skinless thighs
8" flour tortillas
scallions
PREPARATION
In a small bowl, combine hoisin, water, sesame oil, cornstarch, soy sauce, and garlic; set aside.
In medium slow cooker, combine coleslaw mix and carrots.
Slice chicken into 1/8" slices, then cut slices in half lengthwise.
Place on top of cabbage mixture in crock.
Drizzle with 1/4 cup of the hoisin mixture.
Cover and cook on low for 6 hours.
Stir in remaining hoisin mixture.
Heat tortillas as directed on package.
Spoon mixture onto tortillas; top with scallions if desired.
