Moo Shu Chicken

INGREDIENTS

  • 1/2 c hoisin sauce
  • 2 Tbsp water
  • 4 tsp toasted sesame oil
  • 1 Tbsp cornstarch
  • 1 Tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 bag coleslaw mix
  • 1 c carrot shreds
  • 4 boneless skinless thighs
  • 8" flour tortillas
  • scallions

PREPARATION

  1. In a small bowl, combine hoisin, water, sesame oil, cornstarch, soy sauce, and garlic; set aside.
  2. In medium slow cooker, combine coleslaw mix and carrots.
  3. Slice chicken into 1/8" slices, then cut slices in half lengthwise.
  4. Place on top of cabbage mixture in crock.
  5. Drizzle with 1/4 cup of the hoisin mixture.
  6. Cover and cook on low for 6 hours.
  7. Stir in remaining hoisin mixture.
  8. Heat tortillas as directed on package.
  9. Spoon mixture onto tortillas; top with scallions if desired.
