Mozzarella Meatballs

INGREDIENTS

  • 2 lb chuck or leaner
  • 1/2 c Italian bread crumbs
  • 1/4 c grated Parmesan
  • 1 tsp salt
  • 1 tsp mortared basil
  • 1/4 tsp pepper
  • 1 tsp Worcestershire sauce
  • 2 cloves garlic
  • 2 eggs
  • 8 oz small mozzarella fresca balls
  • 3 Tbsp EVOO
  • 2 jars pasta sauce
  • pasta or spaghetti squash

PREPARATION

  1. In large bowl, combine beef, crumbs, Parmesan, salt, basil, pepper, Worcestershire, garlic, and eggs.
  2. Shape around mozzarella to form meatballs, sealing in cheese.
  3. In mondo skillet, heat oil on medium-high.
  4. Add meatballs, cook till brown on all sides.
  5. Pour one jar of sauce into crock.
  6. Carefully place meatballs in crock.
  7. Pour second jar of sauce over meatballs.
  8. Cover, cook on LOW 6 hours.
  9. Serve with pasta or spaghetti squash.
