Mu Shu Pork Tacos
INGREDIENTS
- 3 Tbsp EVOO
- 1 c sliced shiitake
- 12 oz lean pork, sliced
- 2 Tbsp soy sauce
- salt & pepper
- 4 c thinly sliced lettuce leaves
- 8 flour tortillas (6")
- 2 scallions, thinly sliced (optional garnish)
PREPARATION
- In the skillet over high, heat the oil. Add mushrooms and cook about 4 minutes, until just tender.
- Add pork, and cook, stirring occasionally, until pork is browned, about 4 minutes. Season with soy sauce, salt and pepper.
- Spread lettuce on tortillas and top with pork mixture. Garnish with scallions if using.
