---++ Mu Shu Pork Tacos
---+++ INGREDIENTS
   * 3 Tbsp EVOO
   * 1 c sliced shiitake
   * 12 oz lean pork, sliced
   * 2 Tbsp soy sauce
   * salt & pepper
   * 4 c thinly sliced lettuce leaves
   * 8 flour tortillas (6")
   * 2 scallions, thinly sliced (optional garnish)
---+++ PREPARATION
   1. In the skillet over high, heat the oil.  Add mushrooms and cook about 4 minutes, until just tender.
   1. Add pork, and cook, stirring occasionally, until pork is browned, about 4 minutes.  Season with soy sauce, salt and pepper.  
   1. Spread lettuce on tortillas and top with pork mixture. Garnish with scallions if using.
