North Woods Wild Rice Soup
INGREDIENTS
2 tsp vegetable oil
1 onion, chopped
2 ribs celery, diced
2 medium carrots, diced
6 oz smoked turkey, diced
1/2 c uncooked wild rice
1 tsp tarragon
1/4 tsp pepper
3.5 c chicken broth
1 can evaporated milk
1/3 c flour
1 c frozen peas, thawed
2 Tbsp sherry
PREPARATION
In medium skillet, heat oil, and cook onion 4 minutes
Place onion, celery, carrots, turckey, rice, tarragon, and pepper in slow cooker.
Pour broth over.
Cover and cook on LOW 6-7 hours.
Stir in peas for last 15 minutes.
Mix milk and flour. Stir into soup.
Cook 20 minutes until thickened.
