North Woods Wild Rice Soup

INGREDIENTS

  • 2 tsp vegetable oil
  • 1 onion, chopped
  • 2 ribs celery, diced
  • 2 medium carrots, diced
  • 6 oz smoked turkey, diced
  • 1/2 c uncooked wild rice
  • 1 tsp tarragon
  • 1/4 tsp pepper
  • 3.5 c chicken broth
  • 1 can evaporated milk
  • 1/3 c flour
  • 1 c frozen peas, thawed
  • 2 Tbsp sherry

PREPARATION

  1. In medium skillet, heat oil, and cook onion 4 minutes
  2. Place onion, celery, carrots, turckey, rice, tarragon, and pepper in slow cooker.
  3. Pour broth over.
  4. Cover and cook on LOW 6-7 hours.
  5. Stir in peas for last 15 minutes.
  6. Mix milk and flour. Stir into soup.
  7. Cook 20 minutes until thickened.
