Oktoberfest Stew

INGREDIENTS

  • 1 lb bratwurst, casings removed, crumbled
  • 1 onion, stringed
  • 6 garlic cloves, smashed
  • 3 small cooking apples, peeled, cored, and cut into 8 wedges each
  • 2 c peeled, diced, sweet potatoes
  • 1/2 tsp cinnamon
  • sea salt
  • black pepper
  • 16 oz hard cider
  • 4 c roasted chicken stock

PREPARATION

  1. Brown the bratwurst on medium to render the fat, about 7 minutes.
  2. Remove with a slotted spoon.
  3. Cook the onion and garlic in the rendered fat for about 5 minutes, being careful not to burn the garlic.
  4. Add the apples, sweet potatoes and cinnamon. Season with salt and pepper.
  5. Cook 2 minutes
  6. Add cider and stock, cover, and cook 15 minutes.
  7. Uncover and cook another 15 minutes or until the potatoes are soft.
  8. Let rest 5 minutes before serving.
