Oktoberfest Stew
INGREDIENTS
- 1 lb bratwurst, casings removed, crumbled
- 1 onion, stringed
- 6 garlic cloves, smashed
- 3 small cooking apples, peeled, cored, and cut into 8 wedges each
- 2 c peeled, diced, sweet potatoes
- 1/2 tsp cinnamon
- sea salt
- black pepper
- 16 oz hard cider
- 4 c roasted chicken stock
PREPARATION
- Brown the bratwurst on medium to render the fat, about 7 minutes.
- Remove with a slotted spoon.
- Cook the onion and garlic in the rendered fat for about 5 minutes, being careful not to burn the garlic.
- Add the apples, sweet potatoes and cinnamon. Season with salt and pepper.
- Cook 2 minutes
- Add cider and stock, cover, and cook 15 minutes.
- Uncover and cook another 15 minutes or until the potatoes are soft.
- Let rest 5 minutes before serving.
