---++ Oktoberfest Stew ---+++ INGREDIENTS * 1 lb bratwurst, casings removed, crumbled * 1 onion, stringed * 6 garlic cloves, smashed * 3 small cooking apples, peeled, cored, and cut into 8 wedges each * 2 c peeled, diced, sweet potatoes * 1/2 tsp cinnamon * sea salt * black pepper * 16 oz hard cider * 4 c roasted chicken stock ---+++ PREPARATION 1. Brown the bratwurst on medium to render the fat, about 7 minutes. 1. Remove with a slotted spoon. 1. Cook the onion and garlic in the rendered fat for about 5 minutes, being careful not to burn the garlic. 1. Add the apples, sweet potatoes and cinnamon. Season with salt and pepper. 1 Cook 2 minutes 1. Add cider and stock, cover, and cook 15 minutes. 1. Uncover and cook another 15 minutes or until the potatoes are soft. 1.
