Orange Curry Chicke

INGREDIENTS

  • 1 c frozen orange juice concentrate
  • 2/3 c + 2 Tbsp water
  • 2 Tbsp curry powder
  • 2 tsp salt
  • 1 onion, minced
  • 4 tsp jar garlic
  • 2 Tbsp oil
  • 2 Tbsp cornstarch
  • 2 c cooked chicken, cubed
  • 2 packages broccoli, cooked.

PREPARATION

  1. In the red pot, over medium heat, combine orange juice, 2/3 c water, curry powder, salt, onion garlic and oil.
  2. In a measuring cup, combine cornstarch and 2Tbsp water.
  3. Whisk slurry into the orange juice mixture; continue whisking until thickened.
  4. Remove sauce from heat -- heat chicken and broccoli, toss with sauce and serve.
