Orange-Sage Sweet Potatoes with Bacon

INGREDIENTS

  • 4 lbs sweet potatoes, peeled and sliced 1/4" thick
  • 1/2 c frozen orange juice concentrate, thawed
  • 3 Tbsp packed brown sugar
  • 1.5 tsp salt
  • 1/5 tsp sage, crushed
  • 1/2 tsp thyme, crushed
  • 2 Tbsp butter, cut up
  • 4 slices bacon, diced, cooked, and drained

PREPARATION

  1. Place sweet potatoes in medium slow cooker.
  2. Combine juice concentrate, brown sugar, salt, sage, and thyme.
  3. Pour over sweet potatoes; toss to coat.
  4. Dot with butter.
  5. Cover and cook on LOW for 5-6 hours or HIGH for 2.5-3 hours.
  6. Before serving, stir to coat with juice mixture and sprinkle with bacon.
