Orange Sesame Chicken

INGREDIENTS

Sauce

  • 1/3 c orange juice
  • 1/4 c chicken broth
  • 2 Tbsp soy sauce
  • 2 packets Splenda
  • 1 Tbsp rice wine
  • 1/2 tsp Sriracha or to taste
  • 1 Tbsp rice vinegar
  • 1/4 tsp white pepper
  • 2 tsp cornstarch

Chicken

  • 2 breasts, cubed
  • kosher salt
  • 1 1/2 Tbsp cornstarch
  • 1 Tbsp sesame oil
  • 4 cloves garlic
  • 1 inch grated ginger
  • 1 tsp orange zest
  • sliced scallions and sesame seed for garnish

PREPARATION

  1. Mix sauce ingredients, set aside.
  2. Lightly salt chicken and coat with cornstarch, set aside.
  3. Heat mondo skillet on high. Add 1 tsp sesame oil and half the chicken.
  4. Cook 2-3 minutes/side or until browned; remove and set aside.
  5. Repeat with other half of chicken.
  6. Add 1 tsp sesame oil and stir-fry garlic and ginger until fragrant, about 1 minute. Add orange zest, then chicken.
  7. Stir chicken, then add sauce and cook until sauce is thickened, about 1-2 minutes.
  8. Serve with rice.
