Peanut Butter Cookies

Ingredients

  • 1 cup unsalted butter
  • 1 cup (240 grams) crunchy peanut butter
  • 1 cup (200 grams) white sugar
  • 1 cup (200 grams) brown sugar (or 165g white sugar and 35g molasses)
  • 2 eggs
  • 2+1/2 cups (312 grams) AP flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1+1/2 tsp baking soda

Preparation

  1. Cream butter, peanut butter, and sugars together in a bowl.
  2. Beat eggs into wet mixture
  3. In a separate bowl, sift flour, baking powder, baking soda, and salt.
  4. Stir dry mixture into wet mixture
  5. Refrigerate for an hour
  6. Roll dough into 1 inch balls
  7. Place dough balls onto baking sheet
  8. Flatten each ball with a fork, making crisscross pattern
  9. Bake in 375 degree oven until GBD, about 10 minutes
