Pork Carnitas (Mexican Pulled Pork)

INGREDIENTS

  • 2.5 lbs pork loin
  • 6 cloves garlic, slivered
  • cumin
  • adobo seasoning
  • garlic powder
  • 3/4 c chicken broth
  • 1 chipotle pepper (adobo sauce)
  • 2 bay leaves.

PREPARATION

  1. Season pork with salt and pepper, brown on all sides.
  2. Remove from heat and allow to cool. Deglaze pan with broth if desired.
  3. Using a sharp knife, cut little holes and insert garlic slivers into them.
  4. Season pork with cumin, adobo and garlic powder.
  5. Pour broth in crockpot. Add bay and chipotle.
  6. Place pork in crockpot and cover.
  7. Cook on LOW for 8 hours.
  8. Remove bay and chipotle.
  9. Shred pork using two forks.
  10. Combine well with juices in crock.
  11. Cook another 30 minutes.
