Pork with Spinach and Tomatoes
INGREDIENTS
2 Tbsp EVOO
4 pork chops
2 Tbsp melted butter
1/4 c chicken broth
3 Tbsp lemon juice
1 c grape tomatoes
5 oz bag baby spinach
PREPARATION
Heat oil in mondo skillet on medium-high.
Add chops and season with salt and pepper.
Brown on both sides; remove to plate and keep warm.
Add butter, broth and lemon juice to pan and heat for few minutes.
Return pork to pan, cover, reduce heat to low and cook 8-10 minutes.
Remove and keep warm.
Add tomatoes and spinach and stir through sauce.
Cook 2-3 minutes until spinach is wilted.
Serve pork with veggies and sauce from pan.
