Pork with Spinach and Tomatoes

INGREDIENTS

  • 2 Tbsp EVOO
  • 4 pork chops
  • 2 Tbsp melted butter
  • 1/4 c chicken broth
  • 3 Tbsp lemon juice
  • 1 c grape tomatoes
  • 5 oz bag baby spinach

PREPARATION

  1. Heat oil in mondo skillet on medium-high.
  2. Add chops and season with salt and pepper.
  3. Brown on both sides; remove to plate and keep warm.
  4. Add butter, broth and lemon juice to pan and heat for few minutes.
  5. Return pork to pan, cover, reduce heat to low and cook 8-10 minutes.
  6. Remove and keep warm.
  7. Add tomatoes and spinach and stir through sauce.
  8. Cook 2-3 minutes until spinach is wilted.
  9. Serve pork with veggies and sauce from pan.
