Port Chops
INGREDIENTS
1 Tbsp butter
1 Tbsp EVOO
4 pork chops
1/4 tsp salt
1/4 tsp pepper
1/4 c sweet red wine or port
1/2 c chicken broth
2 Tbsp ketchup
1/8 tsp thyme
PREPARATION
Heat butter and oil in mondo skillet over medium-high.
Season chops with salt and 1/8 tsp pepper
Add to skillet, cook 3-4 minutes/side until 160.
Remove to platter.
Add wine to skillet, cook 1 minute, scraping bottom.
Add broth, ketchup, 1/8 tsp pepper and thyme.
Cook 3 minutes, stirring occasionally.
Spoon sauce over chops.
Serve with rice or mashed potatoes.
