Port Chops

INGREDIENTS

  • 1 Tbsp butter
  • 1 Tbsp EVOO
  • 4 pork chops
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 c sweet red wine or port
  • 1/2 c chicken broth
  • 2 Tbsp ketchup
  • 1/8 tsp thyme

PREPARATION

  1. Heat butter and oil in mondo skillet over medium-high.
  2. Season chops with salt and 1/8 tsp pepper
  3. Add to skillet, cook 3-4 minutes/side until 160.
  4. Remove to platter.
  5. Add wine to skillet, cook 1 minute, scraping bottom.
  6. Add broth, ketchup, 1/8 tsp pepper and thyme.
  7. Cook 3 minutes, stirring occasionally.
  8. Spoon sauce over chops.
  9. Serve with rice or mashed potatoes.
