Potato Ham-Bone Soup
INGREDIENTS
1 rib celery, thinly sliced
1 carrot, thinly sliced
1/2 onion, sliced
1 Tbsp EVOO
2.5 lbs yellow potatoes, peeled and cubed
1 can chicken broth
8 oz cream cheese
1 c ham, diced
3/4 c + 2 Tbsp shredded Cheddar, divided
PREPARATION
Add EVOO to Voldepot. Heat on medium and cook celery, onion and carrot until tender.
Add potatoes and broth.
Bring to a boil; simmer until potatoes are tender, about 30 minutes
Add cream cheese and mix until blended.
Add ham and stir until heated through.
Mix in 3/4 c cheddar.
Serve topped with remaining cheddar.
