Potato Ham-Bone Soup

INGREDIENTS

  • 1 rib celery, thinly sliced
  • 1 carrot, thinly sliced
  • 1/2 onion, sliced
  • 1 Tbsp EVOO
  • 2.5 lbs yellow potatoes, peeled and cubed
  • 1 can chicken broth
  • 8 oz cream cheese
  • 1 c ham, diced
  • 3/4 c + 2 Tbsp shredded Cheddar, divided

PREPARATION

  1. Add EVOO to Voldepot. Heat on medium and cook celery, onion and carrot until tender.
  2. Add potatoes and broth.
  3. Bring to a boil; simmer until potatoes are tender, about 30 minutes
  4. Add cream cheese and mix until blended.
  5. Add ham and stir until heated through.
  6. Mix in 3/4 c cheddar.
  7. Serve topped with remaining cheddar.
