Purple Peas with Ham

INGREDIENTS

  • 3 slices diced bacon
  • 1 1/2 Tbsp EVOO
  • 1 1/2 c chopped onion
  • 3 cloves garlic
  • 8 oz ham, diced
  • 4 c chicken broth
  • 4 c purple peas, fresh
  • salt and pepper to taste

PREPARATION

  1. Cook bacon till almost crisp, drain.
  2. Heat olive oil in large saucepan over medium, add onion and ham and cook, stirring until onion is tender.
  3. Add garlic, cook 1 minute.
  4. Add the bacon, broth and peas and bring to a simmer. Reduce heat to low, cover and simmer for 50-60 minutes.
  5. Uncover and cook 5-50 minutes.
  6. Salt and pepper to taste.
