Quick French Onion Soup

Ingredients

  • 3 Tbsp butter
  • 4 LARGE yellow onions, sliced
  • 1 Tbsp all purpose flour
  • 2 c beef stock (not broth)
  • 1 tsp Worcestershire sauce
  • 4 sliced French bread
  • 4 slices swiss or gruyere cheese

Preparation

  1. Melt butter, add onions and cook covered 10 minutes, shaking pan frequently to prevent sticking
  2. Stir in flour till well-mixed.
  3. Add stock, 2c water and Worcestershire sauce--bring to boil over high
  4. Reduce heat and simmer, covered till onions are VERY soft -- 10 or so minutes
  5. Preheat broiler and place bread on sheet. Toast on both sides
  6. Cover each slice with a cheese slice and broil till cheese is melted.
  7. Place 1 bread slice in each bowl, ladle in soup.
