Quick French Onion Soup
Ingredients
3 Tbsp butter
4 LARGE yellow onions, sliced
1 Tbsp all purpose flour
2 c beef stock (not broth)
1 tsp Worcestershire sauce
4 sliced French bread
4 slices swiss or gruyere cheese
Preparation
Melt butter, add onions and cook covered 10 minutes, shaking pan frequently to prevent sticking
Stir in flour till well-mixed.
Add stock, 2c water and Worcestershire sauce--bring to boil over high
Reduce heat and simmer, covered till onions are VERY soft -- 10 or so minutes
Preheat broiler and place bread on sheet. Toast on both sides
Cover each slice with a cheese slice and broil till cheese is melted.
Place 1 bread slice in each bowl, ladle in soup.
