Reuben Casserole

INGREDIENTS

  • 4 c water
  • 1.5 c milk
  • 1/3 c butter
  • 1 Tbsp mustard
  • 2 pouches roasted garlic mashed potatoes (the kind that call for milk/butter)
  • 6 oz deli corned beef, cut into 1.5" pieces
  • 1 can saurkraut, rinsed well & drained
  • 2 c shredded Swiss
  • 4 tsp caraway if desired
  • Thousand Island Dressing

PREPARATION

  1. Heat oven to 375. Grease or spray 13" x 9" pan
  2. Heat water and butter to boil in saucepan, remove from heat.
  3. Add milk and mustard. Stir in potatoes, just until moistened.
  4. Let stand 1 minute or until liquid is absorbed. Whip with fork until smooth.
  5. Spread about 3 c of the potatoes in baking dish.
  6. Top with corned beef, then sauerkraut and sprinkle with 2 tsp caraway seeds.
  7. Spoon remaining potatoes over top. Sprinkle with cheese and remaining seeds.
  8. Bake 20-30 minutes until cheese is light golden brown.
