Reuben Casserole
INGREDIENTS
4 c water
1.5 c milk
1/3 c butter
1 Tbsp mustard
2 pouches roasted garlic mashed potatoes (the kind that call for milk/butter)
6 oz deli corned beef, cut into 1.5" pieces
1 can saurkraut, rinsed well & drained
2 c shredded Swiss
4 tsp caraway if desired
Thousand Island Dressing
PREPARATION
Heat oven to 375. Grease or spray 13" x 9" pan
Heat water and butter to boil in saucepan, remove from heat.
Add milk and mustard. Stir in potatoes, just until moistened.
Let stand 1 minute or until liquid is absorbed. Whip with fork until smooth.
Spread about 3 c of the potatoes in baking dish.
Top with corned beef, then sauerkraut and sprinkle with 2 tsp caraway seeds.
Spoon remaining potatoes over top. Sprinkle with cheese and remaining seeds.
Bake 20-30 minutes until cheese is light golden brown.
