Reuben Pot Pie

INGREDIENTS

  • 1 box pie crusts
  • 1 lb corned beef, cubed
  • 1 c drained, refrigerated sauerkraut
  • 3 Tbsp butter
  • 1/4 c flour
  • 3/4 c beef broth
  • 1/3 c dark beer
  • 2 Tbsp Worcestershire sauce
  • 1 bag shredded Swiss (1.5 c)
  • 2 oz shredded white cheddar (1/2 c)
  • thousand island dressing (optional)

PREPARATION

  1. Heat oven to 400.
  2. Place one pie crust in large deep dish pie plate.
  3. Place corned beef in crust; top with sauerkraut.
  4. In saucepan, melt butter over medium-high. Add flour and cook 1 minute.
  5. Slowly add broth and beer, stirring constantly. Heat to boiling, stirring, until mixture thickens.
  6. Add Worcestershire and cheeses. Stir until cheese is melted.
  7. Pour over beef and sauerkraut.
  8. Top with second crust.
  9. Seal edges and cut slits.
  10. Bake 55 minutes or until crust is golden and filling is bubbly.
  11. Let stand 10 minutes before serving.
  12. Drizzle with thousand island if desired.
