Roasted Cabbage Steaks

INGREDIENTS

  • 1 2-lb head cabbage, red or green
  • 1.5 tbsp olive oil
  • 2-3 large garlic cloves, smashed with the flat of a chef's knife
  • kosher salt and cracked black pepper

PREPARATION

  1. Preheat oven to 400°F. Spray a baking sheet with cooking spray.
  2. Pull outer leaves off cabbage (the dirty one(s)). Slice top to bottom (with the root end down) into 1" slices.
  3. Rub both sides of each slice with smashed garlic, then, using pastry brush, brush with olive oil.
  4. Sprinkle each side with salt and pepper.
  5. Bake on middle rack for 30 minutes. Carefully turn over each "steak" and bake an additional 30 minutes.
  6. Serve hot.
