Roasted Tomato Soup

INGREDIENTS

  • 1 28-oz can peeled whole tomatoes, drained
  • 1/4 c EVOO
  • 1 tsp Italian seasoning
  • 1/2 small red onion, chopped
  • 2 tsp jar garlic
  • 1/4 c chicken broth
  • 1/2 c ricotta
  • 1/2 c heavy cream

PREPARATION

  1. Add tomatoes, olive oil, seasoning, onion, garlic and broth to slow cooker.
  2. Cook on LOW six hours.
  3. Puree with stick blender.
  4. Add ricotta and cream before serving.
