Rosemary Garlic Pork Loin

INGREDIENTS

  • Pork Loin
  • 2 cloves garlic minced (not jar)
  • 1/2 tsp salt
  • 2 tsp rosemary, mortared
  • 1/4 tsp black pepper
  • 1 Tbsp olive oil
  • 1/4 c olive oil
  • sea salt
  • black pepper
  • 1 Tbsp olive oil

PREPARATION

  1. Mix together garlic, 1/2 tsp salt, 1/4 tsp pepper, rosemary and 1 Tbsp oil.
  2. Place the pork loin in a 13" x 9" pan.
  3. Spread seasoning over loin.
  4. Refrigerate 4-6 hours.
  5. With a sharp knife, cut into 10 or 12 slices.
  6. Brush both sides of each slice with oil, sprinkle with salt and pepper.
  7. Heat 1 Tbsp olive oil over medium-high in mondo skillet.
  8. Cook medallions 3-5 minutes per side.
