Seared Steak with Carrot Cauliflower Mash
INGREDIENTS
1 lb baby carrots, chopped
1 cauliflower, chopped
3/4 tsp tarragon
1 Tbsp butter, softened
2 lbs steak
1/2 tsp honey
2 tsp EVOO
PREPARATION
Drop chopped veggies into boiling water with a little salt.
Boil until you can easily pierce them with a fork, about 15 minutes.
MIx tarragon into butter.
Sprinkle salt and pepper to taste on steak.
Drain veggies, add 1/4 tsp salt, honey, and half the tarragon butter.
Mash veggie mixture; cover to keep warm.
Heat skillet on medium-high. Add oil and sear steak for 3-4 minutes/side.
Serve steak over mash with the remaining tarragon butter
