Slow Cooker Pork Stew with Dumplings
INGREDIENTS
2 lbs pork loin cut into bite-sized pieces
2 large carrots, cut into 3/4" pieces
2 ribs celery, cut into bite-sized pieces
2 onions, chopped
2.5 c chicken broth
2 bay leaves
2 eggs
1 pkg stuffing mix for chicken
1 c warm water
1 tub (8 oz) chive & onion cream cheese spread
PREPARATION
Combine pork, carrots, celery, onion, broth, and bay leaves in crock.
Cover and cook on LOW 8-10 hours. Discard bay leaves
Mix eggs, water, and stuffing mix; shape into 8 balls.
Stir cream cheese into pork mixture until melted.
Gently stir in stuffing balls, cover, cook on HIGH 30 minutes.
Turn off crock. Let stand 15 minutes.
