Slow Cooker Winter Warm Pork

INGREDIENTS

  • 8 oz sliced mushrooms
  • 1 large onion, sliced
  • 1 apple, chopped
  • 3/4 tsp thyme, divided
  • 2 lb pork roast
  • 1 Tbsp Dijon mustard
  • 2 tsp salt, divided

PREPARATION

  1. Put produce into slow cooker. Sprinkle with 1 tsp salt, half of thyme and stir.
  2. Spread mustard, remaining salt and thyme over meat and put into slow cooker.
  3. Cook on high for 4-6 hours or low for 6-8 hours.
  4. Spoon onions, apples, mushrooms and any extra liquid into bowls and layer sliced meat on top.
