Smokin' Strata

INGREDIENTS

  • 2 Tbsp unsalted butter
  • 8 oz sliced mushrooms
  • 2 leeks, thinly sliced, white and light green parts, only
  • 1 10-oz loaf focaccia bread, cut into 1/2" cubes
  • 4 oz smoked Gouda, grated (1 c)
  • 1.5 c whole milk
  • 1.5 c half-and-half
  • 9 eggs
  • 2 Tbsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp pepper

PREPARATION

  1. Heat oven to 400
  2. Spray 13" x 9" dish with cooking spray
  3. In skillet, melt butter over medium-high, saute mushrooms and leeks until soft, about 8 minutes.
  4. Spread half the bread cubes in the pan.
  5. Top with 3/4 of the cheese and 3/4 of the leek mixture.
  6. Top with remaining bread cubes, then cheese, then leek mixture.
  7. In a large mixing bowl whisk together milk, half-and-half, eggs, mustard, salt, and pepper.
  8. Pour over layers.
  9. Bake for one hour or until eggs are firm and set in the center and top is golden brown.
