Smokin' Strata
INGREDIENTS
- 2 Tbsp unsalted butter
- 8 oz sliced mushrooms
- 2 leeks, thinly sliced, white and light green parts, only
- 1 10-oz loaf focaccia bread, cut into 1/2" cubes
- 4 oz smoked Gouda, grated (1 c)
- 1.5 c whole milk
- 1.5 c half-and-half
- 9 eggs
- 2 Tbsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp pepper
PREPARATION
- Heat oven to 400
- Spray 13" x 9" dish with cooking spray
- In skillet, melt butter over medium-high, saute mushrooms and leeks until soft, about 8 minutes.
- Spread half the bread cubes in the pan.
- Top with 3/4 of the cheese and 3/4 of the leek mixture.
- Top with remaining bread cubes, then cheese, then leek mixture.
- In a large mixing bowl whisk together milk, half-and-half, eggs, mustard, salt, and pepper.
- Pour over layers.
- Bake for one hour or until eggs are firm and set in the center and top is golden brown.
