Smoky Tomato Bisque

INGREDIENTS

  • 2-1/2 c beef stock or broth
  • 1 28-oz can crushed tomatoes
  • 1 6-oz can tomato paste
  • 2 small ham hocks
  • 1 large onion, chopped
  • 1 medium potato, cubed
  • 1 carrot, sliced
  • 1 small red bell pepper
  • 2 ribs celery, sliced
  • 2 tsp jar garlic
  • 1 tsp dried thyme
  • 1/2 tsp ground allspice
  • 1/2 tsp curry powder
  • 1-1/2 c milk
  • 2 Tbsp cornstarch
  • 1 tsp sugar
  • salt and pepper to taste

PREPARATION

  1. In slow cooker, combine all ingredients, except milk, cornstarch, sugar, salt and pepper.
  2. Cover and cook on high 4-5 hours.
  3. Discard pork hocks. Add 1 cup milk and blend with an immersion blender until smooth.
  4. Cover and cook on high 10 minutes.
  5. Combine remaining 1/2 cup milk, cornstarch, and sugar.
  6. Pour into slow cooker and cook, stirring, another 2-3 minutes until thickened.
  7. Season with salt and pepper to taste.
