Smoky Tomato Bisque
INGREDIENTS
- 2-1/2 c beef stock or broth
- 1 28-oz can crushed tomatoes
- 1 6-oz can tomato paste
- 2 small ham hocks
- 1 large onion, chopped
- 1 medium potato, cubed
- 1 carrot, sliced
- 1 small red bell pepper
- 2 ribs celery, sliced
- 2 tsp jar garlic
- 1 tsp dried thyme
- 1/2 tsp ground allspice
- 1/2 tsp curry powder
- 1-1/2 c milk
- 2 Tbsp cornstarch
- 1 tsp sugar
- salt and pepper to taste
PREPARATION
- In slow cooker, combine all ingredients, except milk, cornstarch, sugar, salt and pepper.
- Cover and cook on high 4-5 hours.
- Discard pork hocks. Add 1 cup milk and blend with an immersion blender until smooth.
- Cover and cook on high 10 minutes.
- Combine remaining 1/2 cup milk, cornstarch, and sugar.
- Pour into slow cooker and cook, stirring, another 2-3 minutes until thickened.
- Season with salt and pepper to taste.
