Spaghetti Squash Primavera
INGREDIENTS
2 small spaghetti squash
2 tsp EVOO
2 Tbsp minced shallot
2 cloves garlic
1/2 c diced red onion
1/2 c celery, diced
1/2 c carrots, grated
2 c broccoli
1 c diced zucchini
1 jar pasta sauce (Merlot Marinara?)
1 Tbsp grated Romano or Parmesan
6 oz Mozzarella Fresca
PREPARATION
Cook spaghetti squash and cool slightly.
Remove strands and place in large mixing bowl
In skillet, heat oil over medium-low, add shallots, garlic, onion, celery and carrots and cook 5 minutes.
Add broccoli and zucchini.
Season with salt and pepper.
Add sauce and simmer on medium until veggies are tender-crisp about 5-6 minutes.
Add 4 cups of spaghetti squash and the Romano/Parmesan.
Cook one minute.
Put in 13" x 9" pan and top with mozzarella. Broil until the cheese melts.
