Spaghetti Squash Primavera

INGREDIENTS

  • 2 small spaghetti squash
  • 2 tsp EVOO
  • 2 Tbsp minced shallot
  • 2 cloves garlic
  • 1/2 c diced red onion
  • 1/2 c celery, diced
  • 1/2 c carrots, grated
  • 2 c broccoli
  • 1 c diced zucchini
  • 1 jar pasta sauce (Merlot Marinara?)
  • 1 Tbsp grated Romano or Parmesan
  • 6 oz Mozzarella Fresca

PREPARATION

  1. Cook spaghetti squash and cool slightly.
  2. Remove strands and place in large mixing bowl
  3. In skillet, heat oil over medium-low, add shallots, garlic, onion, celery and carrots and cook 5 minutes.
  4. Add broccoli and zucchini.
  5. Season with salt and pepper.
  6. Add sauce and simmer on medium until veggies are tender-crisp about 5-6 minutes.
  7. Add 4 cups of spaghetti squash and the Romano/Parmesan.
  8. Cook one minute.
  9. Put in 13" x 9" pan and top with mozzarella. Broil until the cheese melts.
