Speedy Meatball Stew

Ingredients

  • 1 cup frozen peas & carrots
  • 1 cup frozen corn kernels
  • 24 meatballs from Kroger
  • 2 tsp EVOO
  • 1 lg onion
  • 1 tsp garlic
  • 8 oz mushrooms, sliced
  • 1 can beef broth
  • 1/4 c madeira or marsala
  • 1 envelope brown gravy mix

Preparation

Put veggies in colander and run under tepid water to remove ice. set aside

Heat oil in soup pot over medium. Add chopped onion, garlic and mushrooms

Cook about 3 minutes

Pour 1/2 c water, broth, wine, veggies, meatballs into pot. Cover and bring to a boil.

Reduce heat to medium and cook 8 minutes or until heated through

Make brown gravy. When the stew is heated, stir in gravy and stir for 1 minute or till thick.

Serve over rice.
