Spinach Tortellini Tomato Soup

INGREDIENTS

  • 2 Tbsp EVOO
  • 1 Tbsp butter
  • 1 onion, chopped
  • 3 cloves garlic
  • 2 cans Italian diced tomatoes
  • 1 jar tomato basil pasta sauce
  • 4 c veggie broth
  • 1 pkg (12 oz) frozen tortellini
  • 1 bag baby spinach
  • salt and pepper

PREPARATION

  1. In white pot, heat EVOO and butter until butter melts.
  2. Add onion, cook 2 minutes or till translucent
  3. Add garlic, cook 2 minutes.
  4. Stir in tomatoes and pasta sauce, raise heat to medium high and bring to boil.
  5. Add broth and bring to boil.
  6. Add tortellini and spinach
  7. Cook for 10 minutes or until tender.
  8. Let stand 5 minutes.
  9. Salt and pepper to taste.
