Stuffed Acorn Squash

INGREDIENTS

  • 2 medium acorn squash
  • 4 slices bacon, diced
  • 1 medium onion
  • 1 granny smith apple, peeled, cored and diced
  • 1 lb ground beef
  • 1/4 c packed brown sugar
  • 1 tsp pumpkin pie spice
  • 1/2 tsp sage
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp bread crumbs

PREPARATION

  1. Heat oven to 375
  2. Place squash, cut sides down, in 2 13" x 9" pans. Add 2 c water to each pan. Bake 40 minutes
  3. Meanwhile, cook bacon in mondo skillet over medium for 4 minutes.
  4. Add onion and apple, cook an additional 4 minutes.
  5. Add beef, Cook, breaking up beef and stirring occasionally until brown.
  6. Add brown sugar, sage, spice, salt and pepper.
  7. Remove from heat and stir in bread crumbs.
  8. Drain water from pans. and flip over squash.
  9. Spoon mixture into squash halves.
  10. Bake for 20 minutes. Serve warm.
