Stuffed Shells

INGREDIENTS

  • 1 box spinach, thawed, squeezed
  • 1 16-oz container cottage cheese
  • 1 onion, chopped
  • 1 egg white
  • 1 envelope Italian dressing mix
  • 1 c mozzarella shreds
  • 20 jumbo pasta shells, cooked, cooled
  • 1.5 c traditional pasta sauce

PREPARATION

  1. Heat oven to 425
  2. Combine spinach, cottage cheese, onion, egg white and dressing mix.
  3. Stir in 1/2 c mozzarella.
  4. Spread 3/4 c sauce in 13" x 9" baking pan.
  5. Spoon spinach mixture into shells and place on sauce in pan.
  6. Top with remaining sauce; sprinkle with 1/2 c mozzarella
  7. Cover with foil.
  8. Bake 30 minutes; remove foil and bake 15 minutes longer.
  9. Let stand 5 minutes before serving.
