Texas Beef with Butternut Squash

INGREDIENTS

  • 1 1/2 lbs stew meat
  • 4 c cubed butternut squash
  • 2 cans fire roasted tomatoes
  • 1 1/2 c beef broth
  • 1 large onion, chopped,
  • 1 4-oz can diced green chiles
  • ground ancho chili powder to taste (start with 1 tsp)
  • 2 tsp cocoa powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 3 cloves minced garlic

PREPARATION

  1. In medium or large slow cooker, combine ingredients.
  2. Cover and cook on LOW 8-10 hours.
  3. Serve with rice or polenta.
