Texas Beef with Butternut Squash
INGREDIENTS
1 1/2 lbs stew meat
4 c cubed butternut squash
2 cans fire roasted tomatoes
1 1/2 c beef broth
1 large onion, chopped,
1 4-oz can diced green chiles
ground ancho chili powder to taste (start with 1 tsp)
2 tsp cocoa powder
1 tsp cumin
1 tsp oregano
3 cloves minced garlic
PREPARATION
In medium or large slow cooker, combine ingredients.
Cover and cook on LOW 8-10 hours.
Serve with rice or polenta.
