Tomato and Buttermilk Bisque

INGREDIENTS

  • 1 can diced fire roasted tomatoes
  • 2 cans tomato soup
  • 2.5 c buttermilk
  • 2 Tbsp chopped fresh basil
  • 2 garlic cloves, minced
  • 1/4 tsp black pepper
  • 1/4 c shredded Parmesan
  • croutons for garnish

PREPARATION

  1. In red or black pot, on medium, combine tomatoes, soup, buttermilk, basil, garlic, and pepper.
  2. Cook for 7 minutes, stirring frequently, until hot.
  3. Add Parmesan, cook 2 minutes longer.
  4. Serve topped with croutons.
