Top Me Twice Cake
Cake:
2 c. |
flour |
1 c |
sugar |
1 tsp |
baking soda |
1 tsp |
salt |
1 13.5oz. can |
crushed pineapple, undrained (not the little can, but the larger size) |
1 tsp. |
vanilla |

eggs |
Topping:
1/2 c |
brown sugar |
1/2 c |
chopped nuts |
Sauce:
1/2 c |
butter |
1/2 c |
cream or half-n-half |
1/2 c |
sugar |
1/2 tsp |
vanilla |
Grease bottom only of a 9" square pan. Combine all cake ingredients at low speed until blended. Beat 2 minutes at medium speed. Pour into pan.
Sprinkle with topping. Bake at 350 degrees for 45-50 minutes.
Just before cake is done, prepare sauce:
melt butter, add cream, sugar and vanilla; mix thoroughly.
When cake is done, pour hot sauce over warm cake. (I poke
holes in the cake with a fork, to let the sauce get down into the cake).
