Triple Vanilla Pound Cake
INGREDIENTS
1.5 c cake flour
1/8 tsp salt
1/8 tsp baking soda
1/2 c (1 stick) unsalted butter at room temperature
1.25 c vanilla sugar
1 Tbsp vanilla paste (or 1.5 tsp vanilla extract)
3 large eggs at room temperature
1/2 c buttermilk at room temperature
PREPARATION
Set a normal oven to 325 or ours to 375
Lightly spray a 9" x 5" loaf pan with cooking spray and line it with a sheet of parchment or foil for easy removal
Sift together the flour, salt, and baking soda. Set aside.
In a stand mixer, cream the butter, sugar, and vanilla together until light and fluffy.
Scrape down the sides of the bowl as necessary. Beat in the eggs one at a time.
Blend in the buttermilk.
Slowly add the flour. Make sure everything is well mixed. Do the last bit by hand.
Turn the batter into the loaf pan and spread out evenly.
Bake on the middle rack for 60-70 minutes, or until a toothpick inserted in the center comes out without wet batter clinging to it.
Cool on a rack.
