Veggie Quiche
INGREDIENTS
- 1 Tbsp butter
- 1 onion, stringed
- 1 tsp salt, plus more to taste
- 1/2 tsp pepper, plus more to taste
- 3-4 c chopped veggies (see Note)
- 8 eggs
- 1 c milk
- 1 c grated cheese of choice
PREPARATION
- Heat oven to 425
- Melt butter in cast iron skillet over medium.
- Add onion strings and sprinkle a bit of salt/pepper over them.
- Cook until they are golden and starting to caramelize, about 10 minutes
- Remove from heat and spread onions on bottom of skillet.
- Spread veggies evenly over onions--the skillet should look fairly full.
- In a bowl, use a fork to beat eggs with milk and cheese, 1 tsp salt and 1/2 tsp pepper. Beat just enough to break up the yolks and whites..
- Pour egg mixture over veggies and watch it fill in the spaces.
- Put into the oven and bake for one half hour. Once it's brown all the way across the top, it's done.
- Let cool 20 minutes before slicing into wedges to serve.
Note: For hefty veggies like carrots, broccoli, cauliflower or winter squash, steam or cook them first.
