Veggie Quiche

INGREDIENTS

  • 1 Tbsp butter
  • 1 onion, stringed
  • 1 tsp salt, plus more to taste
  • 1/2 tsp pepper, plus more to taste
  • 3-4 c chopped veggies (see Note)
  • 8 eggs
  • 1 c milk
  • 1 c grated cheese of choice

PREPARATION

  1. Heat oven to 425
  2. Melt butter in cast iron skillet over medium.
  3. Add onion strings and sprinkle a bit of salt/pepper over them.
  4. Cook until they are golden and starting to caramelize, about 10 minutes
  5. Remove from heat and spread onions on bottom of skillet.
  6. Spread veggies evenly over onions--the skillet should look fairly full.
  7. In a bowl, use a fork to beat eggs with milk and cheese, 1 tsp salt and 1/2 tsp pepper. Beat just enough to break up the yolks and whites..
  8. Pour egg mixture over veggies and watch it fill in the spaces.
  9. Put into the oven and bake for one half hour. Once it's brown all the way across the top, it's done.
  10. Let cool 20 minutes before slicing into wedges to serve.

Note: For hefty veggies like carrots, broccoli, cauliflower or winter squash, steam or cook them first.
