Whiskey Fudge

INGREDIENTS

  • 5 c sugar (2 lbs)
  • 2 sticks unsalted butter
  • 1 c milk
  • 1 1/2 tsp vanilla
  • 25 large marshmallows, ripped in half
  • 11.5 oz good 60% cocoa bittersweet chips
  • 2 1/2 c powdered sugar
  • 3/4 c good whiskey (you will be able to taste it)

PREPARATION

  1. Whisk whiskey with powdered sugar--set aside.
  2. Foil and butter a 13" x 9" or larger pan.
  3. Put sugar, butter, milk and vanilla in Dutch oven
  4. Bring to a boil, stirring steadily.
  5. Boil exactly 3 minutes.
  6. Remove from heat.
  7. Add marshmallows and chocolate, stirring until all is melted.
  8. Give whiskey mixture a quick stir, then add to the pot, stirring until incorporated.
  9. Pour into prepared pan.
  10. Chill. Let mellow for a day before cutting.
