White Chicken Enchiladas

INGREDIENTS

  • 2 c mild green chile enchilada sauce
  • 2.5 c shredded cooked chicken
  • 2 c shredded Jack cheese
  • 2 cans (4.5 oz) chopped green chiles
  • 8 tortillas for burritos (8")
  • 1/2 c heavy cream

PREPARATION

  1. Heat oven to 375.
  2. Spray bottom and sides of 13" x 9" pan with cooking spray
  3. Spread 1/2 c of the enchilada sauce in pan.
  4. In large bowl, combine chicken, 1.5 c cheese, 1 c enchilada sauce, and green chiles.
  5. Spoon about 1/3 c mixture down center of each tortilla. Roll up tortillas.
  6. Arrange seam-side down in pan.
  7. In small bowl, mix remaining 1/2 c enchilada sauce and cream.
  8. Pour mixture over enchiladas Sprinkle with remaining cheese.
  9. Spray foil with cooking spray; cover dish with foil.
  10. Bake 30 minutes.
  11. Remove foil; bake 5-10 minutes longer or until cheese is melted and lightly brown.
