Whole Roasted Cauliflower
INGREDIENTS
1 Tbsp EVOO
1 head cauliflower
2 6-oz containers plain Greek yogurt
1 large lime, zested and peeled
1 Tbsp chili powder
1 Tbsp cumin
1 Tbsp garlic powder
1 Tbsp curry powder
2 tsp kosher salt
1/2 tsp black pepper
PREPARATION
Heat oven to 400
Lightly grease a baking sheet with oil.
Trim the base of the cauliflower, removing green leaves and woody stem.
In a medium bowl, combine other ingredients.
Dip cauliflower into mixture; use brush or hands to evenly coat head.
Place the cauliflower on the prepared baking sheet.
Roast for 30-40 minutes, until the surface is dry and lightly browned.
Cool for 10 minutes before cutting into wedges to serve.
Serve with a green salad.
