Whole Roasted Cauliflower

INGREDIENTS

  • 1 Tbsp EVOO
  • 1 head cauliflower
  • 2 6-oz containers plain Greek yogurt
  • 1 large lime, zested and peeled
  • 1 Tbsp chili powder
  • 1 Tbsp cumin
  • 1 Tbsp garlic powder
  • 1 Tbsp curry powder
  • 2 tsp kosher salt
  • 1/2 tsp black pepper

PREPARATION

  1. Heat oven to 400
  2. Lightly grease a baking sheet with oil.
  3. Trim the base of the cauliflower, removing green leaves and woody stem.
  4. In a medium bowl, combine other ingredients.
  5. Dip cauliflower into mixture; use brush or hands to evenly coat head.
  6. Place the cauliflower on the prepared baking sheet.
  7. Roast for 30-40 minutes, until the surface is dry and lightly browned.
  8. Cool for 10 minutes before cutting into wedges to serve.
  9. Serve with a green salad.
